Why the matrix blunts the glycaemic response. In whole fruit, sugar is not free in solution; it is locked inside plant cell walls and surrounded by soluble and insoluble fibre and a large volume of water. That physical structure slows gastric emptying and delays the enzymatic access and absorption of the sugars, so glucose enters the bloodstream more gradually and the insulin response is gentler. EWG is an advocacy non-profit whose Dirty-Dozen alarm drives donations and organic sales; the rebuttals are partly ag-industry-funded. But independent toxicology and USDA monitoring converge with the rebuttal on the SAFETY question — residues sit below EPA thresholds — so the "eat the fruit" conclusion is robust regardless of funder.
• Net. The whole-fruit-protective core is remarkably clean of commercial capture — publicly funded cohorts that indict juice, and a mechanism that serves no seller. The juice and pesticide sub-claims are where funded spin exists in both directions, and the copy stays disciplined on those.
